A fun way for children to eat vegetables.

Ingredients

1 eggplant
1 sweet potato
1 or 2 large tomatoes, sliced
cheese, ricotta/cheddar
salt
Tamarillos could also be used instead of tomatoes, but remember to remove the bitter skin. Also instead of tomatoes, I have drizzled homemade passata over the stack to add moisture.

Method

Cut egg plant into thick slices.

Sprinkle with salt and allow to sit 30 minutes.

Rinse and pat dry. Peel and slice sweet potato thinly.

Layer eggplant, tomato, sweet potato for with cheese.

Bake in a moderate (180°C) oven for about 45 minutes or until vegetables are cooked and cheese melted.
