Ingredients

4 green zucchini, grated
1 teaspoon salt flakes
3 spring onions, finely sliced
½ bunch parsley, chopped
100g feta, crumbled
¼ cup plain flour
2 eggs
Olive oil, to shallow fry
Sour cream, to serve
Poached egg, to serve
Lemon wedge, to serve

Method

Grate the zucchini and combine with the salt. Allow to sit for 10 minutes before squeezing out any excess water.

Combine the zucchini with the spring onions, parsley, feta, flour and eggs and mix into a thick batter.

Shallow fry / pan fry until golden brown and crispy.

To serve, smear a plate with some sour cream and top with the fritters. Add the poached egg and a wedge of lemon and garnish with green leaves.
