Serves 4-6.

Ingredients

375g zucchini
1 large onion
1 red capsicum
other vegetables, such as carrots (optional)
1 cup cheddar cheese, grated
1 cup self-raising flour
¼ cup oil
5 eggs
½ pack French onion soup mix
sesame seeds to sprinkle on top (optional)
salt and pepper, to taste

Method

Coarsely grate the unpeeled zucchini. Finely chop the onion, capsicum and other vegetables. Combine the zucchini, onion, other vegetables, cheese, sifted flour, oil and lightly beaten eggs. Season with salt and pepper.

Pour into a well-greased lamington tin (base measures 16cm * 26cm). Bake in a moderate oven for 30-40 minutes or until browned.

  1. Hello, do you recommend pressing some of the moisture out of the grated zucchini? My recent zucchini fritters, and slice, have remained a bit too moist after cooking?

    • Hi Steve,

      I leave the grated zucchini in a strainer to allow moisture to drain. Pressing with the back of a spoon also helps.
