125g butter, softened
125g caster sugar (plus a little extra to serve)
1 cup self-raising flour
rind of 1 lemon, finely grated
Cream the butter and sugar.
Add the eggs one at a time and beat well.
Add the rind and flour. You can add a little lemon juice if needed to bring the cake batter together.
Bake at 180degC for 35-40 minutes.
Sprinkle with a little sugar to serve.
