Paul West is a Thornbury-based cook and food grower best known as host of River Cottage Australia (SBS, Lifestyle Channel). At this demonstration and tasting, Paul will explore nose-to-tail and root-to-stem cookery. Learn how to create dishes and minimise waste using offal and other underutilised cuts of meat and by using all parts of the vegetables that you buy or grow.
