Serves 4

Ingredients

4 small zucchini
2 tablespoons olive oil or butter
½ cup of pureed tomatoes
large clove garlic roughly chopped
pinch salt, black pepper

Method

Heat oil in frying pan over medium heat.

Trim zucchini and cut in half length wise.

Place cut side down and sautee for about 10 minutes until slightly softened.

Mix together tomato puree, chopped garlic and pepper and pour over zucchini.

Cook, turning zucchini a couple of times, until sauce has reduced to a glaze.
