Ingredients
1 cup melted butter (use oil, olive or grapeseed)
4 eggs
1 cup honey
1 cup brown sugar
2 teaspoons vanilla essence
4 cups plain flour
2 teaspoons bicarb soda
1 teaspoon baking powder
1 teaspoon nutmeg
3 teaspoons cinnamon
4 cups grated zucchini
1 cup chopped walnuts or sunflower seeds
Method
Beat eggs, honey, sugar, butter, vanilla until well blended.
Sift flour soda, baking powder and spices.
Add to mixture, stir until just moist.
Fold in zucchini and nuts. ¾ fill greased muffin tins.
Bake 180°C for 15-20 minutes or until golden and cooked.
