Perfect for Christmas.
Ingredients
175g feta cheese, crumbled
125g cream cheese, softened
100g unsalted butter
1-2 cloves garlic
ground white pepper
a bunch of dill
50g toasted pine nuts
75g semi-dried tomatoes, chopped
100g pesto
Method
Combine the cheese, butter, garlic, pepper and dill in a food processor or mixer until smooth.
Coat a small to medium bowl with oil and line with cling wrap for easy un-moulding.
Layer dip in following order: semi-dried tomatoes, pine-nuts, pesto, cheese mix, pesto, pine nuts, semi-dried tomatoes.
Gently pat down to even out the top, seal and refrigerate for at least 2 hours.
Turn dip upside down on a serving plate and remove cling wrap. Serve with crackers and/or strips of carrots, capsicum, celery or any veggies.
