Ingredients
2-3 ripe bananas (mashed)
juice/pulp of 3-4 passionfruit (seeds are optional)
125g butter, softened
½ cup caster sugar
2 eggs
½ teaspoon vanilla
50g chopped walnuts (optional)
1½ cups plain flour
2 teaspoons baking powder
pinch of salt
Method
Cream the butter and sugar.
Add the eggs one at a time, beating well.
Fold in the mashed bananas, passionfruit pulp, vanilla and nuts (if using).
Lightly fold in the flour, baking powder and salt.
Bake for around 1 hour in a loaf tin at 180degC.
Cool in the tin before turning it out onto a cake rack.
