Naught Distilling make a range of gins, including australian dry, classic dry, overproof and sangiovese.

The production process starts by using a base spirit distilled from wheat because wheat-based spirits carry lovely oils and create a velvety mouthfeel. This base spirit is then pumped into a 800-litre copper pot still, selected botanicals are added, and these botanicals are agitated and heated up in an overnight process to maximise oil extraction. The following morning, the mix is distilled and then condensed to create the gin.

Naught also have a speakeasy-style cocktail bar, open Thursday to Sunday, where you can buy a variety of mostly gin-based cocktails plus food. Book your place.

Nick’s Gnocchi & Pasta make cut pastas (fettuccine, spaghetti, etc), filled pastas (cannelloni and ravioli), lasagne and handmade gnocchi. They also make bolognese and napoletana sauces.

Their pastas are made fresh then frozen (this is the best way to preserve fresh pasta if not cooking within a few days from purchase). They don’t use any preservatives.

Nick started his business in 2019 when he was 19 years of age. It is now a family run business, “like Nonna’s, but Nick’s.” Nick was Nillumbik’s Young Business Achiever for 2022.

No Grainer’s mission is to make the world’s best grain-free bread, which is also free of pseudo grains and starches. Their bread, which includes almond, loaf, mixed seed loaf and date, raisin & walnut loaf, is:

1.    Grain-free – the only flours used are made from almonds, coconuts & chia seeds so they are rich in both nutrients and healthy fats.

2.    Low carb – 80% lower in carbohydrates than regular whole wheat bread.

3.    Starch-free – whilst starches such as tapioca are technically grain-free, they are also highly refined, high in carbohydrates and will spike your blood sugars in the same way as regular white flour.

4.    100% paleo – the bread contains no dairy, pseudo grains, bean flours or gums. Rather than use bean-based gums to bind the bread, they use organic psyllium powder.
