Notes (in their own words):
Considering the many artificial additives, GMOs, and other expendable food processes that we are unwittingly subjected to, Organic Times wants to provide a range of quality, fair-trade chocolate products that not only taste delicious but are made from certified organic ingredients that are both better for us and for Mother Nature too.
Their signature line is their Organic Chocolate Licorice, which goes magically with their chocolate. Complementing this magic taste is Rapadura sugar - an ingredient in their chocolate - grown and produced by Hand-in-Hand, their fair-trade partners. The special thing about Rapadura is that it is an unrefined sugar made from minimally processed organic cane sugar. This means that the molasses and all the goodness remains in the sugar, creating a rich, caramel flavour and a higher mineral and vitamin content.
As innovators of introducing organic chocolate-coated produce to the market, they use premium, organic couverture chocolate and specialise in coating organic produce such as macadamia nuts, roasted almonds, hazelnuts, coffee-beans, sultanas, ginger and licorice. Their range comes in both dark and milk chocolate.
Their chocolate is made using certified organic cacao bought through the Hand-in-Hand fair-trade system which is then processed and manufactured according to an old-established Swiss chocolate recipe. The produce they coat is also certified organic. They use fair-trade organic coffee-beans and most of their other produce is sourced from Australian organic farmers.
In addition to their chocolate-coated line, they also bake delicious, home-style organic cookies, using their organic chocolate in a variety of flavours. And if you are looking for organic ingredients, they offer butter, sugar, flour, cocoa and carob powder.
Opening times: Mon-Fri - 5pm to midnight; Sat-Sun - midday to midnight.
Prosciutto Bros. Craft Bar is the collaboration of two craft brewers - Jamie Cox from Kooinda Brewery and Clyde D'Angelis from Sideshow Brewing. The two partners renovated a large industrial space in Eltham with recycled, up-cycled, retro and handcrafted pieces that create a rustic charm to this otherwise harsh environment.
Behind the bar built with recycled bricks is a choice of 20 taps (15 hand selected craft beers and 5 ciders from Australia) and a bottle fridge that continues the seemingly never ending choice of local crafted goodness. The best place to start is with the house tap CHOP - a special pilsner style brew. To accompany the beer list, they have carefully selected the 'stand outs' from local winemakers from the Mornington Peninsula, Yarra Valley and Geelong regions. Plus there are spirits and cocktails.
Looking in from the outside of the open plan kitchen, a glass deli cabinet presents an array of meats, cheese and antipasti ingredients to entice your taste buds and, hanging above it, are large steel hooks displaying handcrafted cured meats. There are also a range of cooked dishes, from a bbq grill and spit to pizza and gourmet sausages.
The Prosciutto Bros. have created a relaxed, happy and fun atmosphere where you can walk in, find your spot at a table, stool or booth, soak up the easy listening tunes in the background or the live weekend entertainment while awakening every taste bud with simple home style Italian family recipes washed down with a local crafty beer or two.
The Shillinglaw Cottage re-opened in January 2016 under new management and is now a family owned and operated cafe focusing on locally sourced produce, great coffee, chef-made food and friendly service. It offers a dining room and a coffee area as well as an alfresco garden with large children's sandpit, all shaded by a significant old oak tree. Head Chef Bruno Lima and his team have developed an eclectic and diverse menu, offering fresh, local, free range and organic ingredients where possible. All-day breakfast, lunches, coffee and cakes with gluten-free, dairy-free and paleo options are served, as well as a 'Little Shillings' menu for the kids. Open on both week days and weekends. Shillinglaw is also fully licensed and the historical cottage can be hired for private functions.
Shillinglaw is next door to the Eltham Library and close to Alistair Knox park. They are just a short walk from the Eltham town centre and the train station, plus the 902 bus will drop you off at their door.
A little about the history of Shillinglaw cottage, built by pioneers, saved by locals. The cottage was built in 1859 and is constructed from handmade bricks in a Flemish bond pattern. In the 1960s, it was marked for demolition to make way for new council buildings, but a group was formed by the locals to save the cottage. One of the fundraising efforts was the publication of a cookery book "Flavour of Eltham", which was re-printed four times. Brick by brick, the cottage was dismantled and re-built in its original form in its current location.
Smoke and Roast is a distinctly Australian flavour, that all Aussies will love. There is no gluten or MSG in Smoke and Roast; rather it is predominantly natural Australian sea salt that has been carefully blended with a range of herbs and spices. Use it instead of salt and pepper to transform an everyday meal into a gourmet feast that will tantalise your taste buds. Just added to their range are Smoke and Peri, which has all the fantastic ingredients of Smoke and Roast with a gorgeous peri peri twist (for those who love a bit more spice and heat in their cooking), and Smoke and Curry. The colour is sensational. The taste is even better. Use this in white sauce dishes, and as a secret ingredient to lift all your favourite recipes.
