Panton Hill Estate Olives produces extra virgin olive oils, processed primarily as single variety oils, as well as selling table olives. It also makes a handmade range of cosmetic products, all made solely with their extra virgin olive oil, including soap, lip balm, hand scrub and calendula healing balm.
The olive varieties include Frantoio, Correggiola and Koroneiki for oil production, and Kalamata and California Queen varieties for table olives. Quality is always the primary driver at each phase of the production process and the table olives are processed on site, using the traditional salt and water brine method of curing. This takes up to six months of careful attention to ensure the resulting table olives are firm and have the distinctive taste and qualities of their varieties. Part of the secret of the flavours are the shale soils found in Nillumbik, in which olive trees thrive.
At Panton Hill Vineyard and Winery you'll discover beautiful buildings reminiscent of Tuscany, in a bush setting only 45 minutes from central Melbourne. In this family founded and run boutique winery you can taste a wide range of high quality, aged wines - dry, sweet, sparkling and fortified - which are totally estate produced using biological techniques. A huge open fire awaits you during the winter months or in summer, you can enjoy the beautiful courtyard. Homemade pizza and the cured olives are a menu specialty.

Under the Pickle Tree is a maker of premium quality relishes, stir fry sauces, curries and pastes. Proprietar Kelly Meredith inherited some of her grandmother's recipes and created unique recipes influenced by her time living and working in Thailand and Vietnam. All of the Under the Pickle Tree range is made in small batches in a registered kitchen and every effort is made to source produce locally.
The product range includes: spicy tomato relish, burmese sauce, asian apple sauce, pickled cucumbers and ploughman's pickle (300gm). Pastes include lemongrass, goan marsala, green curry, red curry and yellow curry (190gm). To cater for vegans, they have a vegan version of its best-selling lemongrass paste and a vegan red curry paste. Catering tubs are available. Their spicy tomato relish is made with tomatoes from Echuca that would otherwise be bulldozed into landfill; their apple sauce is made with Strathewen apples and pears; and their lemongrass paste uses Hildebrand Grove olive oil and local kaffir lime leaves.
